I would like to recommend: Roy’s Fish and Seafood-Recipes from the Pacific Rim by Roy Yamaguchi.
This book really shows what Hawaiian Cuisine can be. Roy utilizes Hawaiian Fish with Asian cooking style. It is beautiful in its presentation with many interesting ideas and shows excellent cooking in all the recipes.
The book uses many ingredients and is written for professional cooks. There is a Roy’s restaurant in Chicago not far from CHIC!

I sent an email to Roy’s in Japan, and the Roy’s in Guam, hoping to get an externship reply! His places are fantastic, there’s one right over on State and Chicago!
