The Bread Guild meets this Sunday, April 19, at 1:00 p.m. in Kitchen 201. All are welcome - greaseburners, too! The Guild will be baking flatbreads. If you want to be added to the Bread Guild Newsletter, email Chef Tom Beckman tbeckman@chicnet.org.
The next meeting of Club Expo is scheduled for Sunday, April 26, 2009, at the Gonnella Bread Production Facility. Members will learn about large scale production, mixing and formulation, pan and oven techniques, quality controls, nutritional considerations, and sanitation requirements.
Contact Mr. McPhee at 312-873-2091 or amcphee@chicnet.org if you plan to attend. The cost is free but space is limited.
The Entrepreneur Club presents HOW TO CATER A WEDDING: Planning, Costing, Execution and Feedback. Join us for an informative set of meetings before and after a catered wedding in May 2009. We will discuss contracts, planning, costing, menu design, staffing and other items of interest for the pre-event meeting and offer a summary of costs, labor and satisfaction in the follow up meeting as well as feedback from the bride. This will be a valuable opportunity to learn the ins and outs of catering a small wedding of approximately eighty guests.
Monday, April 20th and Monday, June 15th, 2009 4:15pm - Second Floor Conference Room. For questions or to RSVP contact Alisa Gaylon agaylon@chicnet.org or John Fuente jfuente@chicnet.org
The Ethnic Lunch Club meets next on Tuesday, May 5, at 11:30 a.m. Students should meet Chef Mike Salzinski on the sidewalk in front of Huaraches Doña Chio, 1547 W. Elmdale Ave. Cost is $15.00 paid up front to Chef Mike.
Join us as we sample the made from scratch goodness of the giant huarache; a bean filled fresh masa “sandal”, cooked on the comal and topped with your choice of extras. Space is limited – email to reserve your spot msalzinski@chicnet.org.
